Healthy Doughnut Holes

Grain free, paleo, and vegan friendly

I struggled to come up with a name for these bites of magic. They taste like a healthy sugar cookie dough and/or healthy doughnut holes.  They are filled with good fats and natural sugars, and fit within a grain free, vegan, and/or paleo lifestyle. They also make a good pre and post workout snack. 




Ingredients:

1 Cup coconut shreds
1/2 Cup melted coconut butter 
1/4 Cup melted coconut oil
2 Tbsp cashew butter
1 Cup walnuts 
1/2 Cup almond flour
6 pitted medjool dates 
1 tsp cinnamon 
1 tsp cardamom 
1 tsp maca 

Add all ingredients to a food processor (I use a Cuisinart bought at Goodwill. It works like a charm). Blend for a few minutes until all ingredients are fully mixed. It will eventually turn into a large ball like structure. Once it’s finished, scoop out a tablespoon size amount and roll into a ball and place on a baking sheet, then place the balls in the freezer 
for 20 minutes. Once they are pretty solid, place in an airtight container in the fridge. They will keep in the fridge for a couple weeks. 

Options (before freezer):

Add in cacao nibs and pulse for 3 seconds. 
Roll the balls in cinnamon and/or coconut sugar.

Body image

I am turning 30 this year and with a glamorous age, comes wisdom and self acceptance. As you can tell by my age, I was a kid of the 90's and a teen of the early 2000's. Social media and smart phones were non-existent. This meant that I didn't have flawless Instagram models at my fingertips daily. I grew up with Lizzie Macguire and Tapanga Lawrence on TV. I didn't even have the best internet access either.
