Lazy Keto Wraps

After working all day, I get a little too lazy to make dinner. I am not the type to meal plan a prep because I am lazy, but I can still find ways stick to my high fat dietary lifestyle and still keep it it simple & nutritious.  

I came up with these Keto Wraps for those lazy nights.



Ingredients: 

Swiss Chard (you can use collard greens or cabbage)
2 eggs
Your choice of oil, ghee, or butter (for the eggs)
4 slices of bacon
Parmesan cheese (shredded)
Swiss cheese (shredded)
Half and avocado 
*optional seasonings Bacon salt and Everything Bagel Seasoning from Trader Joes

Instructions: 

Fry up the bacon until desired level of crispy.
Fry the eggs up ( I like them a little runny) in oil of your choice or butter. While the eggs are cooking, cut the bacon up in to bits, and then slice up the avocado. 
Lay two large leafs of chard, collards, or cabbage on a a plate. On each leaf, sprinkle your desired amount of Swiss cheese, place one egg for each leaf, sprinkle with desired amount of Parmesan, followed by bacon bits, and then divide the sliced avocado evenly, and then place on top.  
Sprinkle with seasonings.

Healthy Doughnut Holes

Grain free, paleo, and vegan friendly I struggled to come up with a name for these bites of magic. They taste like a healthy sugar cookie dough and/or healthy doughnut holes.  They are filled with good fats and natural sugars, and fit within a grain free, vegan, and/or paleo lifestyle. They also make a good pre and post workout snack.  Ingredients: 1 Cup coconut shreds 1/2 Cup melted coconut butter  1/4 Cup melted coconut oil 2 Tbsp cashew butter 1 Cup walnuts  1/2 Cup almond flour 6 pitted medjool dates  1 tsp cinnamon  1 tsp cardamom  1 tsp maca  Add all ingredients to a food processor (I use a Cuisinart bought at Goodwill.
